Nothing is certain until Apple announces it, but in the past five years, almost all new Macs unveiled at Apple events have been available to order on launch day. The exception is the 24-inch iMac, introduced earlier this year.

The iMac Pro and the latest Mac Pro were previewed in WWDC keynote presentations months before they were ready for release.
